Canape Butters

(For Crackers or Thin Bread)

All these butters are prepared as follows...
Cream butter thoroughly.  Grind fish, meat or vegetables to a paste and combine with the seasonings and butter.  If mixture is not entirely smooth, place in a blender.  Place in molds and put into freezer until set.  Place on Crackers or bread just before serving.

HAM BUTTER
1/2 cup butter
1/4 lb. chopped ham
2 hard boiled eggs, chopped
dash pepper

CHEESE BUTTER
1/2 cup butter
1/4 cup grated Parmesan Cheese or
1-1/2 oz Roquefort or 1/2 cup snappy cheese spread

CHIVE BUTTER
1/2 cup butter
4 drops Worcestershire sauce

HORSERADISH BUTTER
1/2 cup butter
1/4 cup grated horseradish
